Today we are making Northern Thai coconut curry noodles, known as Khao Soi. This dish is famous for its creamy coconut curry broth, tender chicken, soft egg noodles, and crispy fried noodles on top. It is rich, aromatic, and full of layered textures.
In this guide, we will break everything into clear steps with exact measurements, so we can easily follow at home. We will prepare the curry paste, cook the broth, fry the noodles, and assemble the final bowl together.

What We Are Making

Khao Soi is a comforting noodle dish with a coconut-based curry soup. It combines soft noodles soaked in a spiced broth, slow-cooked chicken, and crunchy fried noodles for contrast.
The flavor comes from toasted spices, fresh aromatics, and coconut milk. The result is creamy, slightly savory, and gently spiced, with fresh toppings adding brightness.

Ingredients We Need

For the curry paste:
- 2 black cardamom pods
- 1.5 tablespoons coriander seeds
- 20 g fresh ginger, sliced
- 5 g fresh yellow root, sliced (or 1 teaspoon yellow root powder)
- 1/2 cup shallots, sliced
- 20 g mild dried chilies
- 1 teaspoon salt
For the curry broth:
- Prepared curry paste (from above)
- 360 ml coconut milk (about 1.5 cups)
- 480 ml water (2 cups)
- 8 chicken drumsticks
- 3 tablespoons soy sauce
- 1 tablespoon dark soy sauce
- 1 tablespoon palm sugar or brown sugar
- 2–3 teaspoons fish sauce (adjust to taste)
For noodles and topping:
- 340 g fresh egg noodles
- Cooking oil for frying noodles
- Chopped herbs (cilantro or green onion)
- 1 lime (cut into wedges)
- 1/4 cup chopped shallots or red onion
- 1/2 cup pickled mustard greens
- Optional chili flakes fried in oil

Step 1: Make the Curry Paste

1. First, we prepare the spice base.
2. We lightly crush black cardamom pods and remove the seeds. Then we toast coriander seeds in a dry pan over medium heat until fragrant.
3. Next, we add ginger slices and fresh yellow root slices and lightly char them for 2–3 minutes on each side. We also quickly toast shallots until slightly darkened.
4. We grind dried chilies and toasted spices into powder.
5. Then we use a mortar and pestle to pound ginger, fresh yellow root, and salt into a smooth paste. We add shallots and continue pounding until everything becomes thick and aromatic.
6. Finally, we mix in the ground spice powder. This is our curry paste.

Step 2: Cook the Coconut Curry Broth

1. We heat 120 ml coconut milk in a deep cooking vessel over medium heat.
2. We add the curry paste and stir continuously until it dissolves completely. The mixture becomes thick and fragrant.
3. We continue cooking until coconut oil begins to separate slightly.
4. Next, we add the remaining coconut milk, water, soy sauce, dark soy sauce, and palm sugar.
5. We add chicken drumsticks and bring everything to a gentle simmer.
6. We cook for about 40 minutes until the chicken becomes tender and fully flavored.
7. At the end, we adjust seasoning with fish sauce if needed. The broth should taste bold because noodles will dilute it slightly later.

Step 3: Prepare Crispy Fried Noodles

1. We loosen part of the fresh noodles and cut them into shorter pieces.
2. We heat oil in a deep pan to about 175°C.
3. We fry small batches of noodles until they turn golden and crispy. The bubbling will reduce when they are ready.
4. We remove them and place them on paper to drain excess oil.
5. This gives us a crunchy topping for texture contrast.

Step 4: Cook the Soft Noodles

1. We boil water in a large cooking vessel.
2. We cook the remaining noodles for about 2–3 minutes until soft.
3. We drain them and lightly coat with a small amount of oil to prevent sticking.

Step 5: Assemble the Bowl

1. We place soft noodles into serving bowls.
2. We add 1–2 pieces of chicken on top.
3. We ladle hot coconut curry broth over the noodles.
4. We add crispy fried noodles on top for crunch.
5. Finally, we garnish with shallots, pickled mustard greens, herbs, lime wedges, and optional chili oil.
